Spicy Bean and Beef Chili
1 can kidney beans, drained
1 can garbanzo beans, drained
.5 lb.ground beef
.5 lb. ground sausage
1 tbles chopped onion
1 teasp. chopped garlic
1 can beef broth
3 cans chopped tomatoes
1 teasp. olive oil
1 tbles. unsweetened cocoa powder
2 teasp. cumin
1 teasp. freshly ground pepper
1 teasp. dried oregano
1 teasp. basil
1 teasp. chili powder
.5 teasp. cayenne pepper
Ginger Lime Chicken Salad
2 T. Lime juice
1 T. chopped red onion
2 tsp. grated fresh ginger
1 small clove garlic, minced
1/2 Cup light mayonnaise
2 Cups chopped chicken breast
2 stalks celery cut into thin strips
1/4 Cup nuts or pumpkin seeds
Blend first 5 ingredients in food processor. Add chicken. Cover, chill. Before serving add celery strips. Sprinkle with nuts.
Broccoli Hache
In French, "hache" simply means "minced"
1 head broccoli (about 1 1/2 pounds)
2 Tablespoons extra-virgin olive oil
1 medium onion, cut into 1/2 inch dice
3 cloves garlic, minced
Coarse salt and freshly ground pepper
1. Cut stalks off the broccoli, and peel coarse skin using vegetable peeler. Chop stalks into 1/2-inch pieces, and set aside in a small bowl. Chop florets into 1/2-inch pieces, and set aside in another small bowl.
2. Heat olive oil in a large skillet over medium-high heat. Add onion and garlic, and cook until softened, about 4 minutes. Add chopped broccoli stalks and 1/4 cup water. Cook until stalks soften, about 3 minutes, adding more water if pan gets dry. Add chopped florets, and cook, stiffing occasionally, until tender and bright green, about 6 minutes. Season with salt and pepper, and serve hot.
Hot Fudge Sauce
1 cup heavy cream
1/2 cup light corn syrup. plus more to adjust consistency
1 twelve-ounce bag semisweet chocolate chips
1 teaspoon vanilla
Best-quality vanilla ice-cream
1. Combine heavy cream and corn syrup in a small saucepan. Stir to combine, and bring just to a boil over medium-high heat. Remove from heat, and add chocolate and vanilla.
2. Whisk until the chocolate is melted. If necessary, adjust consistency with additional corn syrup. Serve over ice cream.
